Last Days in Canyon Lake, A Fawn is Born and Moving North…

Our last weekend in Canyon Lake went by pretty fast.  We did get in a hike across the dam at Canyon Lake, a dip in the river at Guadalupe State Park and we did get to see a fawn born at the park early one morning. We also made a road trip over to San Antonio Texas to visit our son and his family at their house and we had hoped to get in a few hikes with them but the weather was not cooperative as it rained off and on the whole time we were there.

We did, however, make time to smoke some pork shoulders (about 15 pounds) and it yielded some fantastic smoked pulled pork after about 10 hours at 250 on my son’s smoker. I don’t miss a lot of things in our full time lifestyle but one thing I do sorely miss is the smoker I had. Every now and then we crave some good smoked meat and even though we have figured out how to smoke some smaller cuts on our Coleman grill it just isn’t the same as having a big smoker where I am able to really adjust the heat and smoke with.

Well after saying our farewells to our family we headed back to Canyon Lake and packed up for our travels the next morning. Where we planned to go remained unknown as I was going to make a game day decision as to our destination based on the weather. I wanted to wait to get the last minute forecasts for this area as they were predicting lots of rain and a fair chance of some severe weather.

Well Monday morning came and it became clear that our best bet was to head north to Belton, Texas and leave the hill country altogether. We would have liked to stay a bit longer in the hill country but with bad weather predicted we felt it was wise to leave… especially since our house has wheels!

Monday morning it was cloudy and we headed out. We went over to San Marcos and then caught Interstate 35 north through Austin Texas. Our timing was perfect as the traffic moved right on through Austin with only minor slow downs. As anyone who has travelled this route knows, it can come to a complete standstill near the river and we were glad we encountered only minor traffic.

It drizzled on us a little north of Austin but stopped as we rolled into Belton Texas at a Corp of Engineers Park called Live Oak Ridge Park. We will stay until this next wave of bad weather passes through Texas and then head north again…

  1. This TX weather has been crazy. I'm in SA and hope to head North in a few weeks, maybe to the Black Hills area.

  2. I purchased a Green Mountain smoker called the Davy Crockett, its a tailgater and works great to take with us in the MH.

  4. TX weather has been crazy. We've certainly enjoyed having an electric smoker that comes with us. If we smoke a pork butt we'll have plenty leftover for the freezer.
